Avocado Coconut Chutney

Equipment

  • mixing bowl
  • frying pan

Ingredients

  • 2 medium avocadoes cubed
  • juice of 1 lemon
  • 2 Tbsp. ginger grated
  • ¼ c. grated coconut
  • ½ tsp. mustard seeds
  • 1 tsp. cumin powder
  • 1 tsp. coconut oil
  • chopped cilantro small amount
  • salt and pepper to taste

Instructions

  • Toss the avocado cubes with the coconut, ginger, and lemon juice.
  • Lightly toast the mustard seeds and cumin powder in the coconut oil and add to the avocado mixture. 
  • Add cilantro, salt, and pepper to taste.
