Avocado Coconut Chutney

Ingredients
- 2 medium avocadoes cubed
- juice of 1 lemon
- 2 Tbsp. ginger grated
- ¼ c. grated coconut
- ½ tsp. mustard seeds
- 1 tsp. cumin powder
- 1 tsp. coconut oil
- chopped cilantro small amount
- salt and pepper to taste
Instructions
- Toss the avocado cubes with the coconut, ginger, and lemon juice.
- Lightly toast the mustard seeds and cumin powder in the coconut oil and add to the avocado mixture.
- Add cilantro, salt, and pepper to taste.
